  • 4 cups chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped bell peppers (red or yellow)
  • 1 cup snap peas or green beans
  • 2 tablespoons red curry paste
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon fish sauce
  • 2 tablespoons lime juice
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Sprinkle minced garlic and ginger over the chicken.
  3. Layer chopped carrots, bell peppers, and snap peas on top.
  4. Pour in coconut milk and chicken broth.
  5. Stir in red curry paste and fish sauce until combined.
  6. Season with salt and pepper to taste.
  7. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  8. Shred the chicken about 30 minutes before serving and stir it back into the soup.
  9. Add lime juice just before serving.
