  • 2 lb small red potatoes, cubed
  • 6 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 2 tablespoons ghee (or butter)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons Parmesan cheese (optional)
  • 2 tablespoons Italian parsley (optional)

Instructions

  1. In a medium bowl, mix chicken thighs with salt and Dijon mustard until evenly coated.
  2. Heat ghee in a large skillet over medium heat. Brown chicken thighs for 5-7 minutes on each side.
  3. Place cubed potatoes in the slow cooker and drizzle with olive oil. Add garlic, remaining salt, black pepper, and thyme; mix well.
  4. Layer browned chicken on top of seasoned potatoes in the slow cooker. Cover and cook on high for 4 hours or low for 7 hours.
