  • pounds corned beef brisket
  • 1 onion (sliced)
  • 6 red potatoes (peeled and halved)
  • 2 cups baby carrots
  • 1 cabbage (cut into wedges)
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dry mustard
  • 1 clove garlic (minced)

Instructions

  1. Trim visible fat from the corned beef brisket.
  2. Spray the crockpot with nonstick spray.
  3. Layer sliced onion, halved potatoes, and baby carrots in the bottom of the crockpot.
  4. Place the corned beef on top of the vegetables.
  5. In a bowl, whisk together beef broth, Worcestershire sauce, minced garlic, and dry mustard; pour over brisket.
  6. Add any included spice packet over the meat if desired.
  7. Cover and cook on low for 8-10 hours or high for 4-5 hours.
  8. In the last hour of cooking, add cabbage wedges.
  9. Slice and serve with mustard if desired.
