  • 2 slices cooked bacon
  • 1 large yellow onion (diced)
  • 1 cup carrots (sliced)
  • ¾ cup celery (diced)
  • 2 cans crushed tomatoes
  • 2 cans cannellini beans
  • 4 cups low-sodium chicken broth
  • 1 box ditalini pasta (uncooked)
  • Spices: garlic, thyme, basil, parsley, salt, black pepper

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Drain excess fat and add to the slow cooker.
  2. Combine diced onion, carrots, celery, garlic, spices, crushed tomatoes, beans, chicken broth, and water in the slow cooker. Stir well.
  3. Cover and cook on low for 7–8 hours or high for 4–5 hours. Add ditalini pasta during the last 30 minutes of cooking.
  4. Serve topped with freshly grated Parmesan Reggiano.
