  • 23 boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 small yellow onion
  • 34 garlic cloves
  • 1 tsp Italian seasoning
  • 1 (14.5 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Place raw chicken at the bottom of the crock pot.
  2. Add chopped onion, minced garlic, Italian seasoning, and crushed tomatoes on top of the chicken.
  3. Pour low-sodium chicken broth over all ingredients.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  5. Shred cooked chicken with two forks and return to the pot.
  6. Stir in heavy cream and gradually add Parmesan cheese until melted.
  7. Cook uncovered on low for an additional 20–30 minutes before serving.
