  • 4 boneless, skinless chicken breasts
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • garlic powder
  • dried thyme
  • salt
  • pepper

Instructions

  1. Spray the inside of the crock pot with non-stick cooking spray and place chicken breasts in a single layer.
  2. Season the chicken with garlic powder, thyme, salt, and pepper.
  3. In a bowl, mix together cream of chicken soup, sour cream, and chicken broth until well combined. Pour over the chicken.
  4. Add frozen mixed vegetables on top for added nutrition.
  5. Sprinkle stuffing mix over the vegetable layer and gently press down.
  6. Cover and cook on low for about 6 hours until the chicken is cooked through (165°F internal temperature) and stuffing is tender.
