  • 4 thin slices prosciutto
  • 3 ears of corn
  • 8 to 10 cups arugula
  • ¼ cup shaved parmesan cheese
  • 3 tablespoons white apple vinegar
  • 1 garlic clove (minced)
  • 1 tablespoon chopped chives
  • 1 tablespoon fresh dill
  • 1 teaspoon honey
  • 1 teaspoon dijon mustard
  • Pinch of salt and pepper
  • ½ cup olive oil
  • 3 tablespoons finely grated parmesan cheese

Instructions

  1. Preheat your grill to high heat. Shuck the corn and grill it until charred (about 10-15 minutes), rotating occasionally. Let cool and slice off the kernels.
  2. In a large skillet over medium heat, cook prosciutto until crispy (5-6 minutes). Remove and let cool on paper towels.
  3. In a mixing bowl, toss arugula with salt and pepper. Add grilled corn and parmesan cheese. Drizzle with vinaigrette and mix well.
  4. Top the salad with crumbled prosciutto just before serving.
