  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup breadcrumbs (or panko for extra crunch)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, garlic powder, oregano, salt, and pepper.
  3. Cut chicken breasts into strips and marinate in the mixture for at least 30 minutes in the refrigerator.
  4. Remove chicken from marinade and coat each piece in breadcrumbs until fully covered.
  5. Place coated tenders on the baking sheet and bake for 20-25 minutes or until golden brown and cooked through (internal temperature of at least 165°F/75°C).
