  • 1 cup lump crab meat
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 beaten egg
  • 1/2 cup breadcrumbs
  • 2 green onions (chopped)
  • 1/4 cup red bell pepper (diced)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Egg roll wrappers
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper. Mix gently.
  2. Lay an egg roll wrapper on a flat surface and place about 2 tablespoons of filling in the center.
  3. Fold the bottom corner over the filling tightly, fold in both sides, then roll upwards while sealing edges with water.
  4. Heat vegetable oil in a frying pan over medium-high heat until it reaches 350°F (175°C). Fry egg rolls until golden brown on all sides (about 3–4 minutes) and drain on paper towels.
  5. Serve hot with dipping sauces such as tartar sauce or aioli.
