  • 8 oz. cherry tomatoes
  • 4 garlic cloves
  • ¼ cup sun-dried tomatoes
  • 1 (15 oz) can cannellini beans
  • ¼ cup vegan cream cheese
  • 2 cups baby greens
  • 1¼ cup vegetable broth

Instructions

  1. In a medium saucepan over medium heat, sauté sliced onion in olive oil for 3 minutes until softened.
  2. Add halved cherry tomatoes and cook for another 5 minutes, stirring frequently.
  3. Stir in minced garlic, chopped sun-dried tomatoes, and tomato paste; cook for an additional minute until fragrant.
  4. In a separate bowl, whisk arrowroot starch with a splash of vegetable broth until smooth; add back into the remaining broth.
  5. Pour the broth mixture into the pan along with drained beans; simmer for about 5 minutes until slightly thickened.
  6. Stir in vegan cream cheese until melted; add baby greens and cook until wilted (about 1 minute). Season with lemon juice, salt, and pepper to taste.
