  • 500g shelf-stable potato gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz can of crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 5 oz fresh baby spinach
  • ½ cup grated Parmesan cheese
  • Dried oregano and basil

Instructions

  1. Boil salted water in a large pot. Cook gnocchi according to package directions until they float (about 2–3 minutes). Drain and set aside.
  2. In a skillet over medium heat, sauté chopped onion in olive oil for about 5–7 minutes until softened.
  3. Add minced garlic and tomato paste; cook for another minute until fragrant.
  4. Stir in crushed tomatoes and seasonings (oregano, basil, salt, pepper). Simmer for at least 15 minutes.
  5. Remove from heat and stir in heavy cream and Parmesan until smooth.
  6. Add fresh spinach until wilted (1–2 minutes).
  7. Toss cooked gnocchi with the sauce until well coated.
