  • 8 oz chicken breast
  • 2 tsp Cajun seasoning
  • 2 tsp avocado oil
  • 1/2 cup diced orange bell pepper
  • 2/3 cup thinly sliced zucchini
  • 2 tbsp minced jalapeno
  • 1/3 cup diced tomato
  • 1/3 cup chopped green onion (divided)
  • 2 tsp tomato paste
  • 1 clove garlic (minced)
  • 1/2 tsp crushed red pepper (plus more for serving)
  • 1 cup half and half (or heavy cream)
  • 1/4 cup grated Parmesan cheese
  • Salt & freshly cracked black pepper

Instructions

  1. Season chicken breast with Cajun seasoning and set aside.
  2. Heat avocado oil in a large nonstick pan over medium heat; cook chicken for about 4–5 minutes per side until cooked through. Remove and keep warm.
  3. In the same pan, sauté zucchini, bell pepper, and jalapeños for 6–7 minutes.
  4. Add tomatoes, green onions, and tomato paste; cook for an additional 5 minutes.
  5. Stir in garlic and crushed red pepper; then mix in half and half, letting it simmer until thickened.
  6. Combine cooked pasta with sauce; stir in Parmesan cheese.
  7. Serve hot, garnished with extra red pepper flakes and green onions if desired.
