  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1/2 medium onion, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium yellow bell pepper, chopped
  • 23 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups fresh baby spinach

Instructions

  1. Boil salted water in a large pot and cook pasta al dente as per package directions (8–10 minutes). Drain.
  2. In a skillet over medium-high heat, brown the Italian sausage for about 8–10 minutes; transfer to a paper towel-lined plate.
  3. In the same skillet, add olive oil and sauté onion and bell peppers until soft (7–8 minutes).
  4. Lower heat; add butter and garlic, cooking for one minute before sprinkling in flour.
  5. Stir in heavy cream and Dijon mustard; let thicken slightly without boiling.
  6. Add cooked sausage and spinach; mix until combined.
  7. Toss pasta with the sauce mixture using reserved pasta water as needed.
