Roasted Garlic Potato Soup is the ultimate comfort food that combines the creamy goodness of Yukon Gold potatoes with the rich, sweet flavor of roasted garlic. This delightful soup is perfect for chilly evenings or as a starter for gatherings, offering a warm embrace in each spoonful.

  • 2 medium Yukon Gold potatoes
  • 1 bulb of fresh garlic
  • 1 medium onion
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream or milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. While garlic roasts, peel and chop potatoes and onion into uniform pieces.
  3. In a large pot over medium heat, add olive oil and sauté onions until translucent (5-7 minutes).
  4. Add chopped potatoes and cover them with vegetable broth. Bring to a boil then simmer for 20 minutes until tender.
  5. Squeeze roasted garlic cloves into the pot and blend until smooth using an immersion blender or countertop blender.
  6. Return to heat if necessary, stir in cream or milk to desired consistency before serving.
