  • 1 small butternut squash (about 3 cups), peeled and diced
  • 1½ cups orzo pasta
  • 3 cups vegetable broth
  • 2 cups baby spinach, roughly chopped
  • ½ cup grated Parmesan cheese

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste

  1. Preheat the oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter. Sauté minced garlic for one minute before adding orzo. Toast for two minutes.
  3. Pour in vegetable broth; bring to a simmer and cook for 10–12 minutes until the orzo is tender.
  4. Stir in Parmesan cheese and heavy cream, then add spinach until wilted.
  5. Gently fold in roasted squash. Season to taste before serving warm.
