1 pound peeled and deveined shrimp
8 ounces linguine or fettuccine pasta
2 tablespoons extra virgin olive oil
4 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 cup heavy cream
½ cup low-sodium chicken broth
½ cup freshly grated Parmesan cheese
Fresh basil, chopped
Lemon juice
Instructions
Prepare all ingredients: peel shrimp, mince garlic, chop sun-dried tomatoes and basil.
Cook the pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
In a skillet over medium-high heat, sauté shrimp in olive oil and butter for about 2 minutes per side until pink; remove and keep warm.
Lower heat and sauté garlic and sun-dried tomatoes for about 1 minute.
Add chicken broth, simmer for 2 minutes; then stir in heavy cream and simmer until slightly thickened (3-4 minutes).
Mix in Parmesan cheese until melted; add lemon juice and chopped basil.
Combine cooked pasta and shrimp with sauce; toss gently to coat.
