  • 6 skin-on, bone-in chicken thighs
  • 500 g baby potatoes
  • 100 g mushrooms
  • 150 g spaghetti or angel hair pasta
  • 200 ml heavy cream
  • 100 ml chicken broth
  • Zest and juice of 1 lemon
  • Olive oil
  • Salt
  • Pepper
  • Garlic powder
  • Dried oregano

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Toss halved baby potatoes and sliced mushrooms in olive oil, salt, pepper, and herbs. Spread in a baking dish and roast for 30–35 minutes until golden.
  3. Season chicken thighs with salt, pepper, garlic powder, and oregano. Sear in a skillet over medium-high heat for about 5–6 minutes per side until browned. Transfer to the oven and bake for an additional 20 minutes or until cooked through.
  4. In the same skillet used for chicken, combine heavy cream, chicken broth, Dijon mustard, and parsley. Simmer until thickened.
  5. Cook pasta according to package instructions; drain and toss with olive oil, lemon zest and juice, olives, and reserved mushrooms.
  6. Serve by plating the pasta first, adding roasted potatoes alongside the chicken topped with the creamy sauce.
