  • 2 large yellow onions, thinly sliced
  • 8 oz mushrooms (cremini or button), sliced
  • 4 cups vegetable broth (or chicken broth)

  • Fresh thyme and rosemary
  • Salt and pepper to taste

Instructions

  1. In a heavy-bottomed pot, heat olive oil and butter over medium heat. Add the sliced onions and cook slowly until caramelized, about 30 minutes.
