  • 6 eggs
  • ½ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 3 tablespoons Kosher pickle juice
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt (divided)
  • ¼ teaspoon ground black pepper
  • ¼ cup fresh chopped dill (+ more for garnish)

Instructions

  1. Boil the potatoes in salted water until tender (15-20 minutes). In a separate pot, boil eggs for 10-12 minutes.
  2. While cooking, mix mayonnaise, Dijon mustard, pickle juice, garlic powder, onion powder, half of the salt, and pepper in a bowl until smooth.
  3. Once potatoes are cool enough to handle, cut them into bite-sized pieces and chop the boiled eggs. Combine with fresh dill and remaining salt in a large bowl.
  4. Pour dressing over the potato mixture and gently fold until well coated.
  5. Cover and refrigerate for at least one hour before serving.
