  • 1 lb sirloin steak (cut into 1-inch pieces)
  • 18 oz cheese tortellini
  • 6 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley and chives (for garnish)
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 tbsp extra virgin olive oil
  • Water for boiling tortellini
  • 1/2 tsp salt (for pasta water)
  • 1 tbsp fresh parsley (chopped or 2 tsp dried parsley)
  • 1 tbsp fresh chives (chopped, optional)
  • 1/2 tsp red pepper flakes (adjust for heat)
  • 1 tsp Dijon mustard (or yellow mustard)
  • 1/2 tsp smoked paprika
  • Juice from 1/2 lemon (about 1 tbsp)
  • Salt & pepper to taste
  • Optional garnishes: more fresh parsley or chives, extra Parmesan, lemon wedges

Instructions

  1. Pat dry the steak pieces and season with salt and pepper.
  2. Boil salted water in a medium saucepan and cook the tortellini according to package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Sear the seasoned steak in batches until browned (about 2-3 minutes per side). Remove from skillet and tent with foil.
  4. Lower the heat to medium, add butter to the skillet until melted, then stir in garlic and herbs for about 1-2 minutes.
  5. Pour in heavy cream, bring to simmer, and mix in Parmesan cheese until melted.
  6. Add drained tortellini and seared steak back into the skillet; toss gently to coat.
  7. Serve hot, garnished with fresh herbs and lemon wedges if desired.
