  • 8 oz whole wheat or gluten-free pasta
  • 1 cup sharp cheddar cheese (grated)
  • 1 cup whole milk (or almond milk)
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour (or gluten-free flour)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Steam cauliflower florets until tender, about 5-7 minutes.
  2. Cook pasta in salted boiling water until al dente; drain well.
  3. In a saucepan, melt butter over medium heat. Whisk in flour until smooth, gradually adding milk until thickened.
  4. Stir in garlic powder and half of the cheddar cheese until melted. Combine with steamed cauliflower and cooked pasta.
  5. Transfer to a greased baking dish, top with remaining cheese, and bake for 20 minutes or until bubbly.
