  • 1 lb boneless, skinless chicken breasts (diced)
  • 8 oz smoked sausage (sliced)
  • 1 cup orzo pasta
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, heat olive oil. Add the diced chicken and season with salt, pepper, and 1 tablespoon of Cajun seasoning. Cook until browned (5-7 minutes), then remove from the skillet.
  2. In the same skillet, brown the sliced smoked sausage for about 3-4 minutes. Add onion, bell pepper, and garlic; sauté until softened (3-4 minutes).
  3. Stir in orzo pasta and remaining Cajun seasoning. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until orzo is tender (10-12 minutes).
  4. Stir in heavy cream and return cooked chicken to the skillet. Simmer together for an additional 2-3 minutes.
  5. Garnish with fresh parsley before serving.
