  • 1 ¼ cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon fresh grated nutmeg
  • ½ cup pecans, toasted
  • ½ cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 12 tablespoons ice cold water
  • 8 oz mascarpone cheese, at room temperature
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup heavy whipping cream
  • 6 oz cranberries, fresh or frozen
  • ⅓ cup packed light or dark brown sugar
  • ⅓ cup apple cider juice
  • Zest of 1 orange
  • A few grates of fresh nutmeg
  • 1 cinnamon stick

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, salt, nutmeg, and pecans. Add cubed butter and blend until crumbly. Stir in egg yolk and enough ice water to form a dough.
  2. Press into a tart pan and chill for 15 minutes. Bake for 15-20 minutes until golden; let cool.
  3. For the filling, beat mascarpone cheese with sugar and vanilla until smooth. Whip cream to soft peaks and fold in.
  4. For the topping, cook cranberries, brown sugar, apple cider juice, orange zest, nutmeg, and cinnamon stick in a saucepan until thickened; cool slightly.
  5. Spread mascarpone filling into cooled crust and top with cranberry mixture. Chill for at least two hours before serving.
