  • 1/2 cup water
  • 6 tablespoons granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup fresh lemon juice

Instructions

  1. Prepare the cranberry filling by simmering cranberries, water, and sugar until softened. Allow to cool.
  2. Preheat oven to 325°F. Line a baking dish with parchment paper.
  3. Mix melted butter, sugar, salt, and flour in a bowl. Press firmly into the baking dish for the crust.
  4. Bake the crust for 16–18 minutes until lightly browned.
  5. Combine eggs, sugar, flour, and lemon juice in another bowl to create the filling mixture.
  6. Spread cooled cranberry filling over the crust, then layer with lemon mixture on top.
  7. Bake at 350°F for about 43–45 minutes until set.
  8. Cool completely before slicing and serving.
