  • 1 cup crushed Ritz crackers
  • 2 eggs (whisked)
  • 1 cup sharp cheddar cheese (shredded)
  • ½ cup whole milk
  • Salt and black pepper to taste
  • ½¾ cup ketchup (for topping)
  • 2 tablespoons brown sugar (for topping)
  • 1 teaspoon yellow mustard (for topping)

Instructions

  1. Preheat your oven to 350°F.
  2. Sauté onions and bell peppers in olive oil until softened (about 5 minutes). Set aside to cool.
  3. In a large bowl, mix together whisked eggs, crushed Ritz crackers, sautéed vegetables, cheese, milk, salt, and pepper.
  4. Gently combine with the ground beef until just mixed; avoid overworking the meat.
  5. Form the mixture into a loaf shape and place it in a loaf pan.
  6. Bake for 30 minutes.
  7. While baking, combine topping ingredients in a bowl.
  8. After the initial bake, add the topping mixture and return to bake for an additional 30-40 minutes until the internal temperature reaches 155°F.
