  • 1 pound Roma tomatoes (seeded and diced)
  • 15 ounce can black-eyed peas (rinsed and drained)
  • 15 ounce can black beans (rinsed and drained)
  • 1 cup frozen sweet corn (thawed)
  • 1/2 cup diced red onion
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup olive oil
  • 2 tablespoons granulated sugar
  • 1/3 cup white vinegar
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • Chopped parsley for topping (optional)

Instructions

  1. In a large mixing bowl, combine diced Roma tomatoes, rinsed black-eyed peas and black beans, thawed sweet corn, and diced red onions and bell peppers.
  2. Drizzle olive oil and white vinegar over the mixture; add chili powder and kosher salt.
  3. Gently toss all ingredients until well combined.
  4. Chill in the refrigerator for 3-4 hours for optimal flavor or serve immediately at room temperature.
