  • 2 ribeye steaks
  • 300 g rigatoni
  • 85 g butter
  • 1 shallot
  • 2 cloves garlic
  • 50 ml double cream
  • 20 g Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper
  • 1 tsp Dijon mustard
  • 1 tsp chili flakes
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 1/2 lemon juice and zest
  • 2 tbsp chopped parsley
  • 1 tbsp chopped chives

Instructions

  1. Rub steaks with olive oil, paprika, salt, and pepper; let sit at room temperature. Boil rigatoni in salted water until al dente.
  2. Heat a cast iron skillet over high heat; sear steaks for about 1.5 minutes per side until golden brown. Baste with butter and let rest under foil.
  3. In the same skillet, lower heat and melt remaining butter. Add shallots and garlic; sauté until fragrant. Stir in spices, then add double cream and simmer until thickened.
  4. Toss cooked rigatoni with sauce and Parmesan until well coated. Slice rested steak thinly and serve over pasta, drizzled with reserved sauce.
