  • 2 (28 oz) cans San Marzano peeled tomatoes (do not drain)
  • 1 cup chicken stock (or vegetable stock)

  • 1/4 cup heavy cream
  • 8 large fresh basil leaves (roughly chopped)
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes
  • Kosher salt and freshly ground black pepper (to taste)
  • 1/3 cup shredded parmesan cheese (optional)
  • Croutons (optional garnish)

Instructions

  1. In a heavy-bottomed pot, heat olive oil over medium-high heat. Sauté minced garlic for 30 seconds until fragrant, then add sliced onion and cook until translucent, about 8 minutes.
  2. Add San Marzano tomatoes (including juice), chicken stock, and sugar to the pot. Simmer uncovered for about 12 minutes until slightly thickened.
  3. Stir in heavy cream, chopped basil, oregano, crushed red pepper flakes, salt, and pepper.
  4. Blend the soup until smooth using an immersion blender or standard blender.
  5. Serve hot topped with shredded parmesan cheese and croutons if desired.
