  • 3 lbs Russet or Idaho potatoes
  • 6 tbsp butter
  • 1/2 cup milk
  • 1/4 cup cooking water (as needed)
  • 1/2 lb bacon
  • 14 oz cabbage (about half a medium head)
  • 2 large leeks
  • Salt and fresh cracked black pepper to taste
  • 1/3 cup diced scallions for topping

Instructions

  1. Peel and cut potatoes into chunks; boil in salted water until fork-tender (15-20 minutes).
  2. Meanwhile, chop bacon and cook in a skillet until crispy; remove and set aside.
  3. In the same skillet, sauté sliced leeks until softened, then add chopped cabbage and season lightly.
  4. Drain potatoes, return them to the pot, add butter and milk, then mash until creamy; season to taste.
  5. Fold in sautéed cabbage mixture and crispy bacon, then stir in scallions before serving.
