Ingredients

Scale
  • 3 cups sweetened shredded coconut
  • 1 cup sweetened condensed milk
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 cup dark chocolate chips (for filling)
  • 2 tablespoons heavy cream (for filling)
  • ½ cup dark chocolate chips (for drizzling)
  • 1 tablespoon coconut oil (for drizzling)

Instructions

  1. In a large mixing bowl, combine sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until the mixture is sticky.
  2. Take about a tablespoon of the mixture and flatten it in your hand. Place a chocolate truffle in the center and roll it into a ball, ensuring the chocolate is fully enclosed.
  3. Place the cookie balls on a parchment-lined baking sheet and refrigerate for 20-30 minutes.
  4. Melt 1 cup of dark chocolate chips with heavy cream in a microwave-safe bowl or double boiler. Drizzle over the chilled cookie balls.
  5. Return them to the refrigerator for another 10-15 minutes to set.
