  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature

  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In one bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla and coconut extracts.
  4. Gradually combine dry ingredients with coconut milk until smooth.
  5. Pour batter into prepared pans and bake for 25–30 minutes; cool completely.
  6. For frosting, beat cream cheese with powdered sugar until smooth; fold in whipped cream.
  7. Frost between layers and on the top and sides of the cooled cakes. Press toasted coconut onto the frosting.
  8. Chill before serving.
