  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1 cup low-sodium vegetable broth
  • 2 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • Salt and pepper to taste
  • Vegetable oil for cooking
  • Green onions and cilantro for garnish

Instructions

  1. Chop garlic and ginger to prepare for cooking.
  2. In a medium saucepan, combine jasmine rice and vegetable broth (1:1 ratio). Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until fluffy.
  3. While the rice cooks, heat vegetable oil in a skillet over medium-high heat. Season chicken with salt and pepper, then sauté for about 6 minutes per side until golden brown.
  4. Remove chicken from the skillet and add minced garlic and ginger. Sauté until fragrant (about 1 minute).
  5. Pour in coconut milk, scraping the bottom of the pan for flavor. Simmer for about 5 minutes.
  6. Slice cooked chicken into strips and return it to the skillet with the coconut sauce. Simmer together for an additional 2 minutes.
  7. Serve the dish by fluffing rice into bowls topped with the coconut chicken mixture and garnished with green onions and cilantro.
