Ingredients

Scale
  • 34 garden-fresh tomatoes, diced
  • ½ teaspoon salt
  • 2 cloves garlic, minced
  • ⅓ cup fresh basil leaves, torn
  • ¼ teaspoon fresh ground black pepper
  • 1 tablespoon red wine vinegar (or balsamic vinegar)
  • 2 tablespoons olive oil
  • 1 baguette, sliced
  • Extra virgin olive oil
  • ½ cup balsamic vinegar
  • 3 tablespoons brown sugar

Instructions

  1. In a mixing bowl, combine diced tomatoes and salt; let sit for 20-30 minutes to meld flavors. Drain excess juice.
  2. Add garlic, basil, black pepper, vinegar, and olive oil to the tomatoes; stir gently.
  3. Preheat oven to 400°F (200°C). Brush both sides of baguette slices with olive oil and toast on a baking sheet for about 5 minutes per side until golden brown.
  4. For the balsamic glaze, simmer balsamic vinegar and brown sugar in a saucepan over medium heat until slightly thickened (about 10 minutes).
  5. Assemble bruschetta by spooning tomato mixture onto toasted baguette slices and drizzling with balsamic glaze.
