  • 3 lbs braising steak, cubed
  • 7 oz bacon, diced
  • 1 cup red wine
  • 3 cups beef stock
  • 1 onion, diced
  • 2 carrots, chopped
  • 3 garlic cloves, minced
  • Fresh parsley for garnish
  • 1 tbsp olive oil
  • 1 tbsp butter if needed
  • Salt and pepper to season
  • 12 small shallots or pearl onions (optional)
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1 bouquet garni – 1 stick celery, 1 bay leaf, sprig thyme, 2 parsley stalks tied together with string or use store bought
  • 1 lb button mushrooms, halved

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium heat. Cook bacon until crispy; set aside.
  2. Season beef with salt and pepper. Brown in batches in the same pot; remove once browned.
  3. Sauté onions until translucent, then add carrots and garlic.
  4. Stir in flour, red wine, beef stock, and tomato paste to create the sauce.
  5. Return bacon and beef to the pot with bouquet garni; simmer for about 150 minutes on low heat (or use Instant Pot/slow cooker as per instructions).
  6. Add mushrooms 10 minutes before serving; adjust seasoning if needed.
