  • 5 strips bacon
  • 3.5 lbs beef chuck
  • 4 tbsp unsalted butter
  • 1 yellow onion
  • 3 large carrots
  • 5 garlic cloves
  • 2 cups Burgundy wine
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • Pearl onions and cremini mushrooms

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Render bacon in a Dutch oven; set aside.
  3. Sear seasoned beef until browned; remove from pot.
  4. Sauté onions and carrots, then add garlic, tomato paste, and flour.
  5. Deglaze with wine; add beef stock, thyme, bay leaves, bacon, and seared beef back into the pot.
  6. Cover and cook in the oven for 2½ hours.
  7. Add sautéed mushrooms and pearl onions; return to oven for another 45–60 minutes until tender.
