  • 1 loaf day-old French bread (cut into 1” cubes)
  • 6 eggs
  • 2 1/2 cups eggnog (full fat)
  • 1/2 cup granulated sugar
  • 1/4 cup pure maple syrup
  • 1 tablespoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups pecans, chopped
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, cubed (1 stick)
  • 1 cup packed light brown sugar
  • 1/3 cup flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Place cubed French bread evenly in the dish.
  3. In a large bowl, whisk together eggs, eggnog, sugar, maple syrup, vanilla, cinnamon, cloves, nutmeg, and salt. Pour over the bread cubes.
  4. Cover and refrigerate overnight.
  5. For the crumble topping: Mix pecans with maple syrup and vanilla; set aside. Combine butter, brown sugar, flour, cinnamon, nutmeg, and cloves until crumbly. Add to pecans and mix well.
  6. Sprinkle the crumble over the casserole and bake for 45–55 minutes until golden brown.
  7. Serve hot with fresh berries or syrup.
