  • 2 tbsp unsalted butter
  • 2 cups diced apples
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • Cream cheese for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a saucepan, boil the apple cider until reduced by half. Set aside to cool.
  3. In another pan, melt butter and sauté diced apples with brown sugar and cinnamon until tender.
  4. In one bowl, whisk together cake flour, baking powder, cinnamon, nutmeg, and salt.
  5. In another bowl, beat melted butter with sugars; add eggs and vanilla.
  6. Combine wet and dry ingredients gently; fold in cooked apples.
  7. Fill muffin tins two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool completely before frosting with cream cheese icing.
