  • 3/4 cup whole milk
  • 1 1/2 teaspoons active dry yeast
  • 2 cups all-purpose flour
  • 3/4 cup wheat starch
  • 1/2 cup powdered sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable shortening
  • 1 large egg white
  • 1 tablespoon vegetable oil
  • 1 1/3 cups semi-sweet melting chocolate chips
  • 1 cup heavy cream

Instructions

  1. Warm the milk to about 110°F and dissolve yeast in it; let froth for 5 minutes.
  2. In a bowl, mix flour, wheat starch, powdered sugar, baking powder, and salt. Add the yeast mixture along with shortening, egg white, and oil; combine until dough forms.
  3. Knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise for about 90 minutes until doubled.
  4. Prepare the filling by heating cream until boiling; add chocolate chips and stir until smooth.
  5. Punch down risen dough, divide into equal pieces (about 12), flatten each piece, add filling, and seal well.
  6. Steam buns over boiling water for 15-20 minutes until fluffy.
