  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a high-powered blender, combine milk, bananas, and spinach until mostly smooth.
  3. In a large mixing bowl, add the blended mixture, then stir in the egg, sugar, vanilla, oil, and Greek yogurt until combined.
  4. In another bowl, mix flour, baking soda, cocoa powder, and sea salt. Gradually fold this dry mixture into the wet ingredients.
  5. Gently fold in the dark chocolate chips (reserve some for topping if desired).
  6. Pour the batter evenly into the muffin cups and bake for 18-22 minutes until a toothpick comes out clean.
