Ingredients

  • 1 cup raspberries
  • 1/2 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 1/4 cup coconut oil (melted)
  • 1/4 cup cocoa powder
  • 2 tablespoons maple syrup (or 1/2 cup melted dark chocolate)

Instructions

  1. Line a muffin tin with silicone muffin liners.
  2. In a small pot, simmer raspberries and maple syrup over medium heat for 8-10 minutes until softened. Mash the mixture, stir in vanilla and chia seeds, then let cool.
  3. In a mixing bowl, combine melted coconut oil, cocoa powder, and remaining maple syrup (or melted dark chocolate).
  4. Pour a tablespoon of chocolate into each muffin liner and freeze for about 5 minutes until firm.
  5. Add a tablespoon of raspberry mixture on top of the chocolate layer and smooth out; freeze again for another 5 minutes.
  6. Top each cup with another tablespoon of chocolate mixture and freeze until fully set (about 2 hours).
  7. Serve chilled after allowing to thaw slightly.
