  • 1/2 cup Unsweetened Cocoa Powder
  • 1 tsp Baking Soda
  • 1/4 tsp Baking Powder
  • 1/8 tsp Salt
  • 1/2 cup Vegetable Shortening
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 Large Egg (room temperature)
  • 1/2 cup Milk (any dairy milk can be used)
  • 1/2 cup Warm Water
  • 1/2 tsp Espresso Powder (gets dissolved in the warm water)
  • 1 cup Unsalted Butter (room temperature)
  • 1 cup Peanut Butter (creamy)
  • 2 1/2 cups Powdered Sugar (sifted)
  • 2 tsp Vanilla Extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, cream together vegetable shortening and sugar until fluffy. Add vanilla, egg, milk, and warm water mixed with espresso powder; mix well.
  4. Gradually add dry ingredients to wet ingredients; mix until just combined.
  5. Drop spoonfuls of batter onto prepared baking sheets about 2 inches apart. Bake for 14 minutes until set but soft.
  6. Cool completely on wire racks.
  7. For frosting, beat together butter, peanut butter, powdered sugar, and vanilla until smooth.
  8. Spread frosting on flat side of half the cakes and sandwich with remaining cakes.
