Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together both sugars and vegetable oil until smooth. Add eggs, cooled coffee, milk, and vanilla; mix until combined.
  4. Gradually stir in dry ingredients until just combined—avoid overmixing.
  5. Fill cupcake liners about two-thirds full with batter. Bake for 18–20 minutes or until a toothpick comes out clean. Cool completely on a wire rack.
  6. Whip heavy cream with powdered sugar and instant coffee granules until stiff peaks form; fill the cupcakes with this mixture after coring out the centers.
  7. For ganache, heat heavy cream until simmering; pour over chopped chocolate and stir until smooth. Drizzle over filled cupcakes.
