  • 1/2 cup chicken or beef stock
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 teaspoons brown sugar

Instructions

  1. Slice the beef against the grain into thin strips. Marinate with soy sauce, peanut oil, and cornstarch for about 10 minutes.
  2. In a bowl, mix together the sauce ingredients: chicken stock, Shaoxing wine, soy sauce, dark soy sauce, and brown sugar.
  3. Steam broccoli until just tender (about 1 minute) and set aside.
  4. Heat oil in a skillet over medium-high heat; cook marinated beef until browned on one side (about 30 seconds), then flip to lightly char.
  5. Add garlic and ginger to the skillet; sauté until fragrant.
  6. Combine beef with steamed broccoli; pour sauce over mixture and cook until thickened (about 1 minute). Serve hot.
