  • 1 lb ground beef (80% lean)
  • 2 cups uncooked macaroni
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 1 cup shredded cheddar cheese
  • ½ cup heavy cream
  • ¾ cup milk
  • 1 can kidney beans (drained)

Instructions

  1. In a large pot over medium heat, brown the ground beef; drain excess fat.
  2. Add diced onion, bell pepper, and garlic; cook until softened.
  3. Stir in chili seasoning, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Simmer for about 20 minutes.
  4. In another pot, melt butter; whisk in flour then gradually add heavy cream and milk until thickened. Stir in spices and cheese until melted.
  5. Combine uncooked macaroni with the chili mixture; pour cheese sauce over it and stir well.
  6. For an extra cheesy crust (optional), transfer to a baking dish, top with more cheese, and bake at 350°F for 15–20 minutes.
