  • 2 tablespoons olive oil
  • Zest and juice of 2 limes
  • 1 tablespoon honey or agave syrup
  • 2 teaspoons chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 cups cooked brown or white rice
  • 1 large avocado, sliced
  • 1 cup shredded purple cabbage
  • 1 cup corn (fresh, canned, or thawed from frozen)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chopped cilantro
  • 1/4 cup green onions, thinly sliced
  • Lime wedges, for serving
  • 1/3 cup plain Greek yogurt or dairy-free alternative (optional)
  • 1 tablespoon lime juice (optional)
  • 1 teaspoon chili powder (optional)
  • Salt to taste (optional)

Instructions

  1. In a bowl, whisk olive oil, lime zest, lime juice, honey, chili powder, garlic powder, salt, and pepper to create the marinade.
  2. Marinate salmon in a shallow dish for 10–15 minutes.
  3. Heat a non-stick skillet over medium-high heat; cook salmon skin-side down for 4–5 minutes until crispy, then flip and cook for another 2–3 minutes until flaky.
  4. Assemble bowls with rice as the base; top with salmon and arrange vegetables around it.
  5. For optional sauce, mix Greek yogurt with lime juice and chili powder in a small bowl.
