  • 1 lb ground chicken
  • 1/4 cup teriyaki sauce
  • 1/2 cup panko breadcrumbs
  • 2 cups shredded cabbage
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 cup chopped green onions (optional)
  • 2 tablespoons avocado oil for frying
  • 4 brioche buns
  • 1/4 cup yum yum sauce (or mayo, sriracha, chili crisp, whatever sauce you like)

Instructions

  1. Prepare the sesame slaw by mixing shredded cabbage, toasted sesame oil, rice vinegar, sugar, salt, and green onions in a large bowl. Set aside.
  2. In another bowl, combine ground chicken, teriyaki sauce, panko breadcrumbs, garlic powder, and salt. Mix until well combined and shape into 4 patties.
  3. Heat avocado oil in a skillet over medium heat. Cook patties for 3-5 minutes on one side until golden brown. Flip and cook for an additional 2-3 minutes until fully cooked (165°F internal temperature).
  4. While patties are cooking, toast the halved brioche buns in the same skillet until lightly browned.
  5. Assemble by spreading yum yum sauce on each bun half, placing a chicken patty on top, and finishing with sesame slaw.
