  • 2 small boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 tablespoons butter
  • 1 small yellow onion (diced)
  • 3 cloves garlic (minced)
  • 4 tablespoons flour
  • 1 ½ cups chicken broth
  • ¾ cup milk
  • 4 oz cream cheese (softened)
  • 1 cup cheddar cheese (shredded)
  • 10 oz diced tomatoes & green chilies
  • ½ lb thin spaghetti
  • 1 cup mozzarella cheese (shredded)

Instructions

  1. Preheat oven to 400°F.
  2. Season chicken with Italian seasoning, salt, and pepper. Heat olive oil in a skillet; cook chicken until golden brown on both sides (5-7 minutes per side). Remove from heat and shred.
  3. In the same skillet, melt butter over medium heat. Sauté onions and garlic until translucent. Stir in flour to create a roux; gradually whisk in chicken broth and milk until smooth.
  4. Mix in softened cream cheese until melted; stir in shredded cheddar until combined.
  5. Cook spaghetti according to package instructions; drain. In a baking dish, combine shredded chicken, cooked spaghetti, diced tomatoes & green chilies, and cheese sauce.
  6. Top with mozzarella cheese and bake for about 25 minutes until bubbly.
