  • 3 cups dry egg noodles
  • 2 cups cooked, chopped chicken
  • 2 cups frozen peas and carrots
  • ¼ cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • ¾ cup heavy whipping cream
  • 18 saltine or Ritz crackers

Instructions

  1. Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Cook the egg noodles according to package directions but undercook by 1 minute. Drain and rinse with cold water.
  3. In a large saucepan over medium heat, melt butter and sauté garlic with seasonings until fragrant. Stir in flour, then whisk in chicken broth and cream until thickened.
  4. In the greased baking dish, combine noodles, sauce, peas and carrots, and chicken; mix well.
  5. Crush crackers and mix with melted butter; sprinkle over the casserole.
  6. Bake for about 20 minutes until bubbly.
