  • 2 shallots, minced
  • 1/4 cup Parmesan cheese
  • 1/4 cup half-and-half
  • 1 cup seasoned bread crumbs
  • 2 tablespoons capers
  • 3 tablespoons olive oil
  • 1/4 cup white wine
  • 1 1/4 cups chicken stock
  • Juice of 1 lemon
  • 3 tablespoons cold butter

Instructions

  1. In a large bowl, mix half the minced shallots, Parmesan, half-and-half, bread crumbs (reserve some), parsley, egg, and capers with the ground chicken. Season with salt, pepper, and garlic powder.
  2. Shape into 12 meatballs and coat with reserved bread crumbs.
  3. Brown meatballs in olive oil in a deep skillet over medium-high heat for about 5 minutes; set aside.
  4. Sauté remaining shallots and capers in the same skillet for one minute. Add white wine and chicken stock; boil before returning meatballs to the skillet.
  5. Simmer until sauce reduces by half. Lower heat, add lemon juice and butter, whisking until emulsified.
