  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup plain Greek yogurt
  • 1 small romaine heart, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 English cucumber, diced and sliced
  • 6 pitas (or flatbreads)
  • Optional: crumbled feta cheese

Instructions

  1. Prepare the tzatziki sauce by mixing Greek yogurt, minced garlic, dill weed, lemon juice, diced cucumber, salt, and pepper in a bowl. Refrigerate until ready to use.
  2. Marinate the chicken in a mixture of olive oil, lemon juice, smoked paprika, cumin, minced garlic, turmeric, coriander, salt, black pepper, onion powder, cinnamon, and crushed red pepper flakes for 1–4 hours.
  3. Grill the marinated chicken over medium heat for about 5–7 minutes on each side until fully cooked. Let it rest before chopping into bite-sized pieces.
  4. Warm the pitas briefly on the grill or skillet. Assemble by layering each pita with chopped chicken, romaine lettuce, cherry tomatoes, red onion slices, cucumber slices, and tzatziki sauce. Top with feta if desired.
